TOAST

So we have a hot sauce thread. And granted I love hot sauce. But what other sauces do you like that come in a bottle? BBQ, Roasting, Marinade, etc...

This one my grandfather used to always have. I have always had some handy. It's like 57 sauce but just a more intense flavor. Really good with chicken.

Pretty cool history as well. About Samson's Sauce

Not if you put it on five minutes before you cook the meat. Especially burgers.

I use it on steaks, burgers and I also like to marinade pork shoulders in it overnight prior to barbequeing them all day. We buy it by the half gallon.

Favorite sauce in a bottle is Stubb's original.

Fischer & Wieser - Roasted Raspberry Chipotle Sauce , fantastic on pork !! we also do a coconut crusted deep fried chicken bites that is out of this world with that sauce. Its a hit from 5 years old to 80

this.
Also, mix it with cream cheese and roll it up in a pepper, and roll that into a flattened chicken breast. tie it off, and smoke 'till done.

Sea salt and fresh ground pepper are the only thing that belong on a steak if you are buying the right steak.

Stubb's is the s***, and I don't normally eat sauce on my BBQ, but I will use Stubb's in limited quantity when available.

Dales is great, I'd have to add this to the mix, can be found at most groceries in our neck of the woods

So, here's my favorite sauce for fish. Usually on salmon, but would be good on any BBQ'd fish.

The wife said I'm nuts for sharing this with you, but I've gotten so many idea's and tips from here so I thought it was my time to give back.

The original recipie is:

1/2 cup butter
3 tablespoons soy sauce
2 tablespoons catsup
1 tablespoon worcestershire sauce
1 tablespoon dry mustard
1 clove crushed garlic

combine all ingredients in a small sauce pan, heat gently but thoroughly.

Done just like that is ok, but I've taken it just a bit further. I find this too greasy and you get lots of flare ups on the BBQ if not watched real close.

I usually add another tablespoon of catsup, and only 2 tablespoons of soy unless its low sodium soy, otherwise it can get too salty. I also put in 4 or 5 cloves of garlic.

I will continue to cook this on low to medium heat, stirring constantly for about 10 minutes or until the butter clarifies and can be separated from the sauce. Throw the grease away leaving a thick paste to coat your fish with that wont slide off on the BBQ, and is really good.
