I have already declared we are having breakfast for dinner tonight and hash browns are definately on the menu.

as it all sat there so hot and yummy i thought about taking a pic but with out smell-o-intraweb what the use




If you'll cross reference this thread with the crawfish boiling thread, I'll mention now that potatoes boiled with crawfish (done right by some real Cajuns mind you), are excellent the next morning either shredded and fried or cubed and fried like home fries.

well that explains why i just bought and ate a pack of nasty precooked prefrozen crawfish .. but that way is better than none at all
hard to ge the fresh stuff out here in the desert
 
Do you not find that the outside of the shredded potato group gets over done while the inside is white and undercooked?

yeah, you gotta learn how cook 'em. You don't just throw the shreds on there in a big pile. Get some oil good and hot, then press the browns out in a thin layer. Maybe 2 or 3 shreds thick. Drizzle a little more oil over the hash browns. Give them time to brown and crisp up, then flip them over. They'll break up a little, but you should be able to get them in 2 or 3 big sheets. A little while longer and they're done.

Salt. Pepper.

I fried the hashbrowns first with salt and pepper. Then I fried the bacon. Last I fried the eggs in the bacon grease. It gives great flavor to the eggs. Just a little more pepper on the eggs and browns, and some ketchup for the browns and it was good to go. Now to finish it off....a dip of copenhagen. Yum.
 
Hashbrowns Scattered, covered and chunked.

New potatoes, Homefries what ever basically big chunks of potatoes fried with butter in a skillet or griddle.

Everything gets a coating of Texas Pete or Franks.
