That looks amazing, a few capers on that would be great I bet.

I had breakfast for dinner last night. Nothing unique, but I fried a couple of thick pieces of bacon in the cast iron, fried a couple of hash browns after that, and then two over easy eggs. Stacked the egg and bacon on the hash brown.

I usually have sliced red onions and capers with this breakfast.. However, I just got back to WY and haven't built my condiment shelves up quite yet..

Start with a cup of rough cut apple's, these were past their prime for eating fresh. Add a pinch of salt and a couple tablespoons of water. Cook on the lowest heat you can get out of your range for about 45 minutes stirring once or twice, when the sauce reaches the consistency you like remove from heat. Next time we have left over mashed potatoes I'll make some potatoe pancakes to go with this.

Whatever I have that is going to spoil before I can eat them fresh. These were Gala. Sometimes if we get Granny Smith or one of the other tart varieties that are to sour to eat fresh I'll use them up this way, I add sugar if the apples are very tart. Usually just a pinch of salt is enough to bring out the sweetness. BTW one quart of cubed apples yeilds about one pint of sauce. Four medium apples will make about one quart of half inch cubes.

Found out need to add more cooking time at higher altitude.
As you can see by the name on the bag, I was the "guest tester" :D

I'm tossing the instant oatmeal and doing this from now on - easy and you can vary the ingredients. Mine was a sausage, spinach, green onion, and mushroom combo.

Ever watch Diners, Drive-ins and Dives? One would assume a chef and resturanteur like Guy Fieri wouldn't get weak in the knees about eating eggs...but he detests eggs. Not that you detest eggs...but this reminded me of him...

It is funny that he hates eggs (Guy that is)... I prefer a runny yoke.. that's the reason I leave a slice of toast at the end... YUM!

Breakfast for dinner. Tomato, onion, roasted green pepper, feta and eggs over a portobello cap. Cam's fridge cleaning post gave me the idea, and my lack of time to shop today sealed the the deal.
