Dove into this thread on page 2, but it would seem that no one has mentioned (SP?) Bier Rocs. Pork sausage, cabbage, onions, season to taste, and wrap a small amount into some pre made dough. PBerry Grands, or the like. Consume with hot coffee with a splash of something from Kentucky, or France. The by-product of this breakfast can be some what devastating, just roll down your windows. Do not consume before Duck Hunting, as the neoprene waders can and have trapped in said by-product.

This thread inspired me to upgrade my current breakfast menu.

My camping set up is all about easy and food is a big part. Up until recently (today) my camp breakfast has been instant maple oatmeal and a banana. Although the past would make my mama proud I was looking for change. Along comes cooking in a Ziplock bag :eek: not new but new to me.

Tools needed:
Pot (7" wide)for boiling water
Stove for heat - I use a Jet Boil
Ziplock bags
Variety of ingredients - your choice but should include eggs

Ingredients:
2 eggs
Spinach
Pre cooked turkey sausage - 1
Cheese
Salt/pepper

Procedure:
Cut it all up and throw it in a Ziplock bag
Remove excess air from bag - not sure why I did this but it seems to work:hillbilly:
Into the boiling water for 12 mins - why 12mins, it looked good at that point:D

In the future for camping I will use a tortilla (no dishes to wash)but I didn't have any at the casa for the test so I used a plate.:meh: Add some sliced avocado and salsa...wala

A couple of other notes making this appealing to me: The water can be from any source. When done you have safe warm water to wash and clean up with. Nothing sticks to the bag so a quick wash and you could reuse it:hillbilly:

So many options on "how do you like your eggs" on a offroad trip. I like mine without the mixed shells and spooge in the bottom of the cooler. Great idea.:cool:
 
Actually I eat oatmeal and coffee for breakfast most days camping. It's quick easy and has complex carbs to keep you going for a long time.

x2...and my cardiologist prefers this over all the artery cloging wonderful breakfasts posted on this thread! DAMN!
 
After our first trip we switched to the pre cracked eggs in a carton. A lot easier and harder to crack in the fridge.


This is going to sound weird, but...

At "The Fresh Market" they sell brown eggs labeled "Organic free-range, gluten free, brown eggs" or some such nonsense. The interesting part is, these eggs have a very tough shell that is easily twice as thick as normal store eggs. They basically don't break unless you want them to.

In November I spent a week in Death Valley, in basically constant motion over all sorts of terrain, and the eggs were still in perfect shape in their original carton when we ate them on the last morning of the trip. Highly recommended for trips. Normal white store eggs usually have 50% broken after a day or two.

Pre-cracked eggs have a very limited life. Good for a weekend, not so good for long and remote travel.

The egg beaters have a pretty long shelf life. I assume they're chalk full of preservatives.

My real favorite trail breakfast is McDonalds. The round eggs on egg mcmuffins are fresh cracked eggs. You can order any breakfast with a "round egg" to get a real egg.

I forgot about egg beaters. Whatever makes them last 120 days, just can't be good for you.

The last breakfast I ate at McDonalds, was 3 years ago the day after the Alaska Cruiser Trek. I was in Anchorage heading for the Kenai in a rental car, I had heard the breakfasts were good, and they have wi-fi, so.......NEVER AGAIN!

A couple of hints if you have never made sausage before;
Season the meat before you grind, grind a sample and cook it to check for seasoning. If you season after grinding, the texture suffers from mixing the chopped meat.

Run a slice of bread through the grinder to push the last pieces of meat through. (I've heard the last bit of meat/bread mixture is pretty dam tasty when fried.;) )

That looks amazing, a few capers on that would be great I bet.

I had breakfast for dinner last night. Nothing unique, but I fried a couple of thick pieces of bacon in the cast iron, fried a couple of hash browns after that, and then two over easy eggs. Stacked the egg and bacon on the hash brown.
 
Start with a cup of rough cut apple's, these were past their prime for eating fresh. Add a pinch of salt and a couple tablespoons of water. Cook on the lowest heat you can get out of your range for about 45 minutes stirring once or twice, when the sauce reaches the consistency you like remove from heat. Next time we have left over mashed potatoes I'll make some potatoe pancakes to go with this.
