I did 275/70/18 LT Michelin Defenders and loved them. 285/65/18 is cool too. 295/70/18 is available too but will require some work to get it to fit.

21 inch to 18 inch will make a big difference but that's like for like. What are you trying to achieve with the new tire?
Well, some of it for sure is just looks. The black Tundra wheels I have I think will look much better than the 21s. I also think a larger diameter tire more filling the wheelwell will look better.

A bonus will be gaining the very modest height the new tire will give me. I might do the AHC lift at some point too.

I am inexperienced with overlanding and boondocking, but have an interest in it with my wife. Nothing extreme at first certainly. So while traditionally I've been 99% pavement, I want something that can handle a little more on. Living in New England, it also needs to be good in snow.

I had defenders on my Sequoia, and thought they were great. Though they were P rated 20s.

So I guess to sum, I want it to look better, not degrade the ride too much, but also be more capable for the unknown.

Falken AT3W, 275/60/20, P-Metric.

33's, snow rated, light and comfortable, while still looking great, and having a rim size that's a good visual match for the size of the vehicle. Bonus points: retaining good handling/towing ability, while still being able to properly air down for the trail.

I am replacing the 21s with 18s. I already have the 18s.

There is exactly one P rated 275/70r18 if you're looking for a larger diameter but still mostly stock NVH. General Grabber APT.
Beyond that there is a smattering or C rated LTs, and then a very large selection of E rated LTs.

Might be just the angle of the photo, but the camber looks way off. When was the last time you had an alignment done?
I think it looks like it's off as well. It looks that way in high mode. In normal mode, it looks okay. I did take it to an alignment shop but they did not feel the need to make any adjustments.

Normal to look pigeon toed in high mode. Likewise, in lo mode
 
Did a little snow wheelin this past weekend. Below is about the only place I needed a tug out. But since I was probably the heaviest I just got a winch. We filled in the hole a bit and threw down some tracks to get through no problem on the second try. It was a nice long fun ditch. The whole road had about 2’ of fresh powder with about 1’ of older stuff below
