I know the "practical" advice is to get 31s but we don't have these trucks for "practical" reasons... you wont regret 33s even if you have to drop to 4th or 3rd to get up big hills bc they will look cool for suspension - IMO springs in the same weight class will all ride more or less the same...

i drilled and tapped a hole in my bellhousing for the sensor, not too hard just be careful you have enough meat for tapping

Snagged 2 volvo S40 seats from pick n pull. Requirement for the long drives planned this summer :) Only tough part I think will be getting them low enough so my head is grazing the roof. Next up is AC.....

I was having some sounds/rattling with mine and once I started using a fuel additive they have all gone away.

naw it was just broken when I took it apart when I rebuilt the engine.

not sure what stock size is but mine also had a plastic housing on the tube that was broken when I did my rebuild so I added a dollop of RTV when reinstalling and no issues so far.

Confirm MAF meter is good, TPS adjustment/check and valve adjustment never hurt anyone... I was getting those codes on and off or a while and those maintenance items seemed to fix my issues. replacing vacuum tubing is also a pretty straight forward afternoon project.

I had an issue where I was overloading the wiring with the current to engage the starter solenoid so it was just clicking. Maybe you have increased resistance in one of the lines due to corrosion/degradation. Check the resistance on the line going to the solenoid and/or directly hot wire it...

Looks great! Not sure what your comfort level is with wrenching yourself but suspension work and interior build out are certainly great things you can DIY and learn a lot along the way (and save a little money) In terms of engines, staying with toyota makes it easier as you dont need any...
