Must've been a junk range we had, I couldn't get a nice low flame, if I wanted a low heat, SOL.

a gas range is the best to cook on, to hell with s***ty electric crap!

never had homemade cheesecake.

how long does it take to prep and cook and all that?
 
10 min prep for the crust, prep the filling while the crust bakes 15 min, put it all in for a bit over an hour, and turn the oven off to let it slowly cool. Stick it in the fridge overnight, and you've got yourself a cheesecake. Not bad at all.
