Apparently you can reduce the cracking by waiting until after the creamcheese and sugar are mixed smooth to add the eggs. Just learned this and haven't had a chance to find out if it works yet.

Well, last night the :princess: took over the cheesecake duty since I had to study. I wasn't surprised that it turned out dang near picture perfect. I gave her the recipe from pg 1 and told her about the tip you had heard about with the sugar/cheese mixture. She also did a few other things differently than how I usually do it.

The modifications are as follows:

-All ingredients were close to room temperature before starting.
-Filling was hand mixed with a spatula instead of using our kitchen-aid mixer
-2 lbs Cream Cheese slightly nuked for 25-30 seconds to make it extra soft, but not melted.
-1.5 Cups sugar for the filling mixed with the 3Tbsp flour thoroughly before adding to the cream cheese.
-Thoroughly mix the dry ingredients with the softened cream cheese until the sugar was completely dissolved.
-Completely omitted the Heavy whipping cream
-Last step: Same number of Eggs added to the filling as in the original recipe, mixed thoroughly at the end after all the sugar was dissolved with the cream cheese.


The only defect was a tiny 1/2" crack that developed when it was cooling. :cheers:
 
Well I drove 12 hours west yesterday, and headed to a friends place to crash. He's already got cheesecake ingredients in the fridge and requested that I bring my pan for the trip. My life is definitely different. Should have a raspberry and chocolate cheesecake ready for a yankee turkeyday potluck tomorrow night. :)

It was very good. :) The cream cheese and sugar do a nice job of taming the jalapeno.
 
Planning to make a full one for a potluck next week, this was just a test to see if it was okay. I think the full one will disappear quickly. :)
 
I managed to talk Curtis over for a trip to the range, and to show me how cheesecake is done the other weekend. I guess I needed to shoot some guns before I could do some baking just for reassurance.

Anyway we made a double batch of jalapeno cheesecake, and he showed me how to do a jalapeno glaze to boot! I though it was gonna be hot as heck, but baking the jalapenos seems to leave all the flavour and only leave the slightest sign that there was a spicy ingredient to it. Even my wife who doesnt prefer spicy foods seemed not to notice the spice of the jalapenos.

Then I burnt some steel together and we picked up a new stainless muffler and bolted it on his 62 to give the broken muffler a little bit of STFU. It sounds good now! QUieter than before but louder than stock, hopefully not too loud for the long trips.

Attached is a couple pics from the last saturday, the modified recipe with some empty 45-70 brass for garnish, (or to hide the fact I got together with another dude to bake cake's on the weekend) and some pics of the fortress of cream cheese. Not quite as cool castle greyskull, but tastier

I wondered when those pics would show up. I expect a full report on how that combo tastes. :)
 
I did a jalapeno and a banana cheesecake last weekend.

I used 3 jalapeno's in the cake (about 3" long) and two for the glaze. It turned out really well. There was a bit more flavour from the jalaenos but it wasnt spicy. Though I think my boss at work whined about maybe getting heart burn.

The banana cheesecake got 1.5 banana's in the mix, the other half on top. I blended it up so there was about 1 cm square pieces and some of it was pureed into the mix. It turned out well, about the right mix of flavour so as not to overpower the flavour of the cheesecake.
 
That makes more sense, I thought it was a banana and jalapeno cheesecake. :doh:
