and FWIW, I thought about putting this in the campfire cuisine forum , but decided that taking my big propane grill setup would be a bit much for a campfire... :D If it's gas, it ain't campin' as they say... :)



OK, anyway, this smoking bit can't be rocket science. I'll just try out a few ways to do this... Got some mesquite chips already...

I've only heard of this trick, never actually tried it, but get some wood planking, soak it in water (or whatever) overnight or longer, then just lay the planks down on the grill and cook the meat on top of it.

YMMV.

Doesn't seem like that would do so well for red meat, but I believe I read someplace that cedar is used for fish (salmon?) like that.
 
Cedar plank salmon is really good.
I use to use an empty tuna can as a smoker on the bbq. Fill the empty can with chips, put the lid back on and put directly on the burner coals. Works way better than the tin foil does.

My new weber has a built in smoker with a dedicated burner under it. Works like a charm.
 
While this still hasn't been moved to the cooking channel thread...here are a few tips for all of you that want to impart a smoke flavor on a gas grill. As someone else mentioned, make a foil boat or use a small foil tray approximately 4"x6", place wood chips of choice, that have been soaked 1 hour in water or liquid of choice (beer, wine, pickle juice, whatever...) over a burner with direct heat underneath. You can accelerate the "soaking of wood chips" by using boiling water/liquid. Once they start to smoke, place your meat on the grill. You can still grill "hot" and some of the smoke flavor will impact your meat, grilling it as you normally might. Smoking and gilling are too different things.

For wood chip flavor notes.

Beef - use mesquite, hickory, pecan, grapevine,
chicken/turkey - hickory, pecan, fruitwoods, maple, alder
Fish - cedar or alder

no worries, I've got my old water heater (80gals) stored in the yard waiting for a real smoker project. But for now, the little foil package with chips soaked in Reposado will have to do. Will make it much more fun to hang around the grill... Mmmm.... take a whiff of that....! Well at least until I got a firefighting DC10 dropping a load on me... People are edgy around here in the summer...
 
I want to start exploring how to smoke meat for extra flavor while/before/after? grilling in a gas grill.
I don't mean really smoking at low heat for hours, but just extra flavor while grilling.
The extent of what I know is that one can soak wood chips, put them in a container and smoke away, but never done it.
Sure I could google this, but I trust Mudders more than Google... :)

So what's to know to get started and what are some good tips?



(oh, and if smoke is a carcinogen etc etc, I don't want to hear about it just yet.. :))

I throw chips directly on the grill in the back and let them smoke a little. I could care less about the mess or ash. Sometimes I'll just cut a couple big chunks and lay them back there.

The Campfire section covers all cooking. By putting it here I'm almost certain it will be buried in a day. At least in the campfire section someone could do a search and get some good hints.
 
I'm not surprised. I'm sure beer adds too much cost to cooking for e666.

dude you've never had beer can chicken?

yup I have, but still a creepy pic. My chickens are esthetically pleasing to the eye after roasting... it's an art dude, what can I say.... :) Plus I don't drink Bud horse piss, only good stuff...
