I am on my first trip in my 96 FZJ80, and the check engine light just popped on. I drove 12 hours from Austin to Santa Rosa Beach. I am staying between Destin and Panama City Beach. I need help/advice on what route to take to get this sorted. I noticed a little bit of fresh looking coolant near the cap on the overflow tank.

Is there an autozone or o’reilys near by? They can read the code for you. I’m assuming you don’t have a code reader. There was a Toyota dealer in fort Walton beach that was pretty good to me when I was down there years ago and lost my keys.
 
Scanned the OBD-2 and had a P0420 fault. I guess its the cat. It's one of the few things that hasn't been replaced. Are OEM cats still available? Can't seen to find them.

Couple things could be causing it besides jumping to a bad cat. O2 sensors were the cause of it in my case. Local shop should have some Denso ones that are OE (or if you are there for a while, I ordered my from amazon and they came super quick). Check the wiring to the O2 sensors as well because fried wiring will trip that code with no signal coming from an O2 sensor.
Also there could be an exhaust leak that has developed between where the 2 factory cats connect or anywhere along the exhaust pipe to them. Take a spray bottle of your favorite dish soap and water, spray over those areas and see if you have bubbles forming.

You could grab a digital thermometer and see if the cats are truly bad. You would measure the temperature at the intake and exit; the exit side of the cat should show a lower temperature.
Multiple options to look at before jumping to bad cats as they are $$$ for OEM and even magnaflow is still costly.

Its more than likely your o2 sensors. That being said, I drove minee for months like that. So you should be able to get back home. Just replace it later, whenever you can and may the odds be forever in your favor

Oh, and go ahead and buy yourself a ScanGauge or UltraGauge, worth the investment.

I had them clear the code but it came back on already. Thanks 🤙🏼

Yes it can clear them
 
Another good option for reading odb2 codes and monitoring signals like coolant temp is to install a bluetooth sender in the odb2 port then run an app like "torque" on your phone to connect to the bluetooth sender and then view the odb2 send.

You may need a different adapter if you run a mac device but I've used this for years with success:

Some of the autoparts stores that have scan tools have the ability to view real time O2 sensor waveforms. IME however you often have to figure it out yourself as the counter guys themselves usually don't know how to get to that function of the scan tool (if that option is there). I tell the counter guy I know how to use the scan tool and ask to take it outside myself, tell them which vehicle I'm working on, they usually allow that IME.

Did you figure out or decide to replace the cat vs just the O2 sensor? I am getting P0420 code as well and my mechanic is suggesting replacing both cats. They are saying both front and rear O2 sensors are acting properly. I may get a second opinion though.

Yes I ordered the denso O2 sensors from Amazon and after I installed bank one sensor, I reset code and it hasn’t come back on since. Been driving it quite a bit. That’s where I’d recommend starting. For me The sensor itself wasn’t bolted as tight as should be, and the gasket was not in great shape. Good luck 🤙🏼
