That's some good investigative work! You could also just monitor the reservoir instead of taking the heater core out of the loop if you have parts on the way.

I can confirm that my 07 runs "hotter" than the earlier trucks. 192-197 is really common in mixed driving. I only see it hit 201 if I'm sitting at a light in gear in 100+ weather with the a/c cranking away. Even then, it will hold that 201 or dip down into the mid 190s while sitting as the fan clutch / thermostat do their job.
 
My 06' is pretty stable. I typically see 186-188* during most driving and weather conditions. A couple degrees cooler in colder weather and a couple degrees warmer in the peak summer weather.
 
Trying to diagnose elevated temps a bit further. I'm over-geared and think running at higher RPMs is causing this. I'm at about 2800 RPMs at 71 mph.

Please report your usual RPMs at highway speeds (70mph-ish).
 
Mine used to sit in the lower 200F range while driving slowly and upper 190F range when on the highway in the summer. I found out that I was half a gallon low on coolant and now I sit at 188-193. Never did see if I had a leak but the level has been rock steady since.
On the highway I'm at around 2200-2300 RPM at 70mph on 33" tires with the 5spd.
 
What does your SC show, once at operating temp, at idle and cruising?

Mine says "WT" which I assumes means water (coolant) temp?

I'm running 215 or so at idle with AC on. Ambient 72. Lower while cruising.
We've variation in ECT (Engine Coolant Temp), by years.
From logs, via tech stream:
2007 (VVTi), 145K, with dirty/clogged radiator fins. 06-07 have different Fan blade & Fan clutch.
ECT 192f to 194f. ~2,600 RPM, 78-80 MPH. With OAT of 97F, IAT 105f, back HWY, 4;30PM, summer full sun. Heading North (ascending) on I-25 out of ABQ, NM. to Den, CO.
ECT 208f to 212F. ~5,100 RPM, 78-80 MPH. With OAT of 97F, IAT 105f, back HWY, 4;30PM, summer full sun. Heading North on I-25 out of ABQ, NM. to Den, CO

ECT 187f to 189f. ~2,200 RPM, 65-70 MPH. With OAT of 93F, IAT ---f, back HWY, 11:30PM, summer full sun. Short run Den HWY.
ECT 187f to 190f. ~2,450 RPM, 68-75 MPH. With OAT of 94F, IAT ---f, back HWY, 2:00PM, summer full sun. Short run Den HWY.
ECT 184f to 194F, 650 to 4,500 RPM. 0-80 MPH. With OAT 50F, IAT---F, Black HWY, 1PM , winter, full sun. 1 hr, drive I-70 mountain HWY

I figured this would be another interesting data point as it’s similar (3UZ).
We had an 06 LS430 in for oil pump leak. While doing the work it received (amongst other work)

Aisin t belt kit/water pump
OE tstat/gasket
Denso radiator (non towing package), w/ OE cap, hoses, and clamps. Used Denso as the last OE LS radiator we installed was made in China. Denso unit made in Indonesia
2.5 gallons of Toyota SLLC

75F Ambient temp & ac on the whole time coolant temp ranged between 184-194 during a 20 mile test drive following repairs of mixed city and highway drive. It mostly stayed around 186-190.

My 07 LC under the same conditions I saw 186-190.
