Sorry, this is a tech post, right? It's a nice truck. don't give up on it yet.
You should buy a couple of cans of foamy engine bright, or otherwise degrease and clean the outside of the engine and transmission. This will allow you to gauge for yourself how much leaking you have.
You should also spend some money on factory service manuals. This post lists all the manuals I have for my 1985:
IH8MUD Forums - View Single Post - FSM Prices???. You can get these manuals from Toyota materials distribution, or
Specter Off-Road, Inc.-Landcruiser Parts & Accessories or maybe even ebay. The body and chassis manual is available for download from here:
Downloads Index - Page: 1. The manuals I use the most are the body and chassis and the emissions manual.
$123 to replace ALL the coolant hoses is a steal. If that's what he means you might think about taking him up on it. A full set of hoses from Toyota will cost about $150. This thread has diagrams that show all the hoses you will need (see posts 3 & 4):

Depending how bad the leaking is, leaking hydraulic systems can be very dangerous (brakes) or leave you stranded (clutch) if they decide to critically fail. If the leaks are persistent you should think about moving them up on your priority leak.
Did the mechanic give you any more specific about which thermal vacuum switch was not working? There are a few and some may be more critical than others.
ToyoDIY has parts diagrams on line. These are good references to find out how things fit together and what parts are needed. I've found the prices listed are generally high, though. If you go to your local toyota dealer, you might find that they are not too familiar with the FJ60. I try to provide my counter guy with the part numbers I need, instead of making him look them up. Also CruiserDan from American Toyota will give discounts on parts for MUD members.
Good Luck.
