Nice pan. And lighter in weight than modern Lodge CI. Glad it worked for you and also good to hear you are carrying on your Grandmother's tradition!

I didn't realize how light (and how sweet) it was until I burnt off 60 years worth of funk. I wish I had taken a before picture - there must have been 1/4" of bark on the outside.

Maybe this will help me put off getting one of these steel skillets!

Nice pan. Since it belonged to your Grandmother, it's the best pan ever. Use it and pass it on.

If there is any rust left, it's time to figure out electrolysis. But it looks great as is.

Don't be afraid of the steel skillets. They are better than you think.

The Lodge 12 inch is the move if you just want 1 pan. For $35 it's hard to go wrong.

With that said, I love my 3 piece De Buyer set. It was $99 when I got it, so $94 is a nice price. I like 2 things better about the De Buyer pans-the higher sides, and the better handle angle. I like them so much in fact, I'm taking them on the Utah trip next month. I've used them so much, they are now nearly as black as the Lodge pans-see my pics in the Filet Mignon thread.

I use both a 10 and 12 inch sized pans a lot, so I think it makes since to just buy the set and be done with it. I'm not in the market just yet though.

On a related note - what's y'all's favorite spatulas? The ones in the store blow. The handle angles are usually wrong, the sizes are awkward, and the leading edge is usually too rounded to do any good. I've got some that I've ground a straight scraping edge on, but I still feel like there's something better out there.

I just ordered one of these to try out:

I use two different spatulas.

First I use what is called a burger spatula
BURGER%20SPATULA..jpg

This is what I clean my pans and griddle with I also flip burgers with it. Very stiff with sharp front and side edges. Great for cleaning my griddle. I used this about 30 minutes ago cooking burgers on the griddle.

I also use a flexible spatula like this one it works great on the griddle for flipping hash browns or fajitas.

It was to long for fry pans so I got another one and cut about half of it off then ground the radius back on it. Perfect for pancakes and most other stuff. I put a slight bevel on the front edge to slide under eggs easier. So I guess technically I have three spatulas.

Got my spatula in - I love it! This is the smaller one and it seems about right for a 10 inch or smaller pan. I'm sure I'll go back for the bigger one at some point.

It needed just a teeny bit of work with some fine sandpaper to make it perfect.

I know it's not a skillet, but "It's not cast iron"!

Birthday present from my wife:

This is the 10 gauge Chef King. Now to season it!

Awesome!!!!

There is your pancake machine, right there. Get some seasoning on there before it rusts!

This is a beast. I tried the salty seasoning method, but it's not showing it as much as the cast iron skillet. Judging by the skillet pics, that must be normal.

I took it for a brief test drive - it's pretty slick, it just had a teeny bit of stickage. Nothing that didn't that come off with a swipe of the spatula.

I put the griddle to work tonight making grilled cheese sammiches. It performed flawlessly. No sticking at all! My new spatula is badass, though I wish it was just a hair bigger.

I also cooked up some tomato soup on my new single-burner.

That's awesome. Your wife must be working tonight?

She was home. The meal was her idea. It was mine to cook up in the kid's clubhouse. She just doesn't like to be photographed!

Bump... I have a Debuyer 12" fry pan on the way. I can't wait.

Meanwhile, I've been trying to wear out this griddle, but it just keeps chugging along.

I tried to make flat top burgers on it tonight. The grill didn't quite put out enough direct heat, but they were still tasty.
