I usually just look for a pack that is meaty all the way through. Easy to spot because they are smaller than the fatty ones.

Speaking of bacon...

Here's a fried shrimp quesadilla from the Three 6 kitchen:

Fried shrimp (frozen, from a bag), bacon, avacado, cheese, peppers, onions, and held together with my last Albuquerque Tortilla from the trip.

I've got to do it. I've had the gasket for a while...just been putting it off. Did you take the lid completely off or were you able to get that surface clean with it still attached?

I took lid off so I could make sure and do it correctly.

I did it at night and it was hard to see due to light even with a head light.

If you can find or have a razor blade holder you would be fine without taking it off. It is another thing that I over thought and I it maybe took an hour total time.

Wife said hey I thawed out one the turkeys in freezer.

So some quick lather in honey ginger balsamic Vinager and some salt and pepper. With heavy heavy hickory smoke we will see if worth a s*** in a few hours but heck it was .58 a lb so it will eat fine for a few meals.

Not cooking yet but chimney comes off and does pizzas. BGE produced these in crazy low numbers before discontinuing them a lot of folks call them "unicorns"

Came in from yard/washing cruiser

Wife had turned yesterday's brisket into an open face: mozzarella, heirloom and baby tomatoes, onion, peas.

Sooner or later she is bound to realize she married beneath her.
