Only if it specifically says "center cut". Lot's of times it's only 3/4 lb instead of full lb too.

It's like bacon, with less fat and with the ends chopped off.
I usually just look for a pack that is meaty all the way through. Easy to spot because they are smaller than the fatty ones.

This has worked well for me. For those that need to replace the gasket.
I used a razor blade and then cleaned with paint thinner.

I've got to do it. I've had the gasket for a while...just been putting it off. Did you take the lid completely off or were you able to get that surface clean with it still attached?

I took lid off so I could make sure and do it correctly.
I did it at night and it was hard to see due to light even with a head light.
If you can find or have a razor blade holder you would be fine without taking it off. It is another thing that I over thought and I it maybe took an hour total time.

So some quick lather in honey ginger balsamic Vinager and some salt and pepper. With heavy heavy hickory smoke we will see if worth a s*** in a few hours but heck it was .58 a lb so it will eat fine for a few meals.
