Your not going to get any significant gain by swapping O2 sensors or desmogging. It's a heavy vehicle that is not at all aerodynamic. It takes fuel to accelerate and takes fuel to keep it going.
A good set of LRR tires might give it another mpg or two, but you will lose off road ability and they aren't worth it unless you need new tires.
I feel as if the truck has plenty of power if I lay into the gas, if I feather the pedal I'm not happy with the performance. I understand that fuel economy is important to some, just not to me. I have found the difference to only be about 1mpg anyway, so Im happy with 9mpg no highway. just my 2cents.
I've found that the biggest (and easiest) component of better fuel mileage is how you drive it. Since buying my 80 years ago, it has "taught" me to take it easy. I drive a mix of city and interstate (40 miles/day) and routinely get 14-16 mpg (I check it every tank). On interstate trips, I have gotten as high as 18 mpg. I camp out in the right lane and do 65-70 mph.
It took me a bit to evolve to this point (I am typically the kind of guy that if I'm driving, I'm exceeding the speed limit), but now it actually feels a lot more relaxing and the 80 seems to like it, too.
