I have a 98 1hz. The cooling system is fine but the glow system temp sensor (coolant temperature sensor) isn't working meaning the glow plugs don't stay on for the correct amount of time. I've already got a new sensor and tested it fixes the issue.

The service manual states you have to drain the coolant to change the sensor so I am thinking of anything else I should do at the same time? Is it worth putting a new thermostat in since they are so cheap? Anything else?

Yes do t-stat and at minimum new upper hose. The upper hose gets the flow of the hot coolant leaving engine, the lower hose gets the cooled coolant going back into engine and fails far less. Depending on age of all hoses it may be a good time to do them all. Upper hoses fail more than lowers due to pressure and heat.
