In my list of "Would love to haves", I am trying to decide what my next upgrade should be. Of course I want to paint her and install all new rubber. That will come later, but I really want either power steering and a 5 speed tranny.
What do y'all think the best upgrade would be?

The H55 would be a great upgrade, but you'll need the split case transfer also. The transmission is probably @ $2500 by now and so is the transfer case, bought new. Don't forget new clutch parts while you're doing it. My thought is go with the power steering first and then upgrade your transmission later.

Factory and mini truck conversions suck if you are actually paying to do them. They retain ALL the slop areas such as a tie rod end, a bell crank, and the pitman arm attachment.
So the FJ60 route alleviates the tie rod ends and pitman allowing for a system that has no slop?

For what it's worth, I'm planning on installing this Electric PS on my rig. Can't vouch for it yet but it's been recommended here in PHX. I'm still running the stock tires/wheels/suspension.

Plus, I believe it has its limits when it comes to tire size. 33's are pushing it and if you ever do intermediate trails, it could damage the EPS.

The perfect is the enemy of the good.
Quickest and easiest power steering upgrade would be mini truck. No grinding(other than to remove the oem manual box), no cutting the frame, no shock tower swaps or alterations. Pretty much plug and play with an early mini-truck ps box and whatever pump fits your engine situation. That's assuming you can find or fabricate the mount. I was lucky enough to get one of the last from Iron Pig Offroad, though I did see them later via another internet vendor (JT Outfitters). You're looking at a few hundred dollars for box, pump, lines and fittings, perhaps another few hundred if you purchase the mount. You'll need to swap the 55 pitman arm on to the mini-truck box. I've run mine in tricky situations with both 31s and 33s with absolutely no problems. My whole conversion was done in a few hours. Finding fittings to mate the mini-truck box with the Saginaw pump took more time than the rest of the install.
Spend wisely and you'll have enough money to begin saving for that five speed while enjoying a better driving Pig.

And I am assuming the factory PS is plug and play, correct?

Got the new E-Power Steering unit installed on Papa Smurf. So far, it works amazing. It's totally adjustable in terms of the power assist and seems like it has way more assist than needed. I've been driving around town on 50% power doing one finger parking lot turns. Not gonna lie, sort of a life-changer. $1200 OTD and worth every penny. Very clean installation too.

Nice! Who did the install? I'm curious if the parts are off the shelf or was it a custom fab?

Hank do you have more picks of the install process and or support bracketing
