What rpm are you at when it starts bucking?
 
Could be a lot of things. Start simple and don't assume it's something sinister. My suggestion? Spark plug wires. Give the truck a tune-up.
 
On the sinister side it could be the injector splices in the harness. Easy to fix, but takes time, and the job can exceed comfort levels in some.
 
This could be way off the spot but I would go through the intake manifold - Throttle body control unit and soak the hell out of it and see if you get any action out of it. I would also clean and maybe replace the little o-ring that is on the throttle adjust screw (the brass looking screw on the intake).

Might be off but when my truck wasn't running well at low RPMs but I could pull power it was the combination of everything being 30+ years old and never being cleaned.
