To start. I have a Land Rover series 3 that was engine swapped with a 3B before my time.

ontop of my numerous other issues, recently I have been having trouble with my throttle. For example I will accelerate and the engine will sort of bunny hop, gradually getting worse unless I slam my foot or release it. (Yes I'm driving properly I don't need tips) or I will be accelerating to let's say 50kmh and then as I rest my foot to maintain speed. It again starts to bunny hop, gradually getting worse unless I release my foot or give full gas.

Any ideas?

Diaphragm on the injection pump.
 
or the air reference lines to the diaphragm
 
You're positive its not a clutch issue?
 
How does that effect it? Around surging power etc

Broken Torsional Control Springs in the clutch can cause a jerking type drive experience, generally at lower revs when accelerating. I wouldnt describe it as "surging", you didnt use that word in your initial post.
