So I need some advice on this "project" cruiser thing. How do you tell if something is a good candidate for a restoration? What are the criteria. Y'all know that I would LOVE to find one to work on, but I don't know what to look for.

What makes this one a good candidate?

Price and location, wouldnt want to drop a lot of money on buying or shipping it only to drop a lot more to bring it to use. Appears to be clean little visible rust or dents. Better the body the easier it will be to fix up.
Some things that make this one not a good candidate is that it is not very complete I can see a bunch of stuff missing from the interior. Another thing would be the condition of the engine. Sounds like an engine swap will be required which isnt super hard but can get to be time consuming if you havent done it and then need to get it running well.
Thats a couple things that come to me quickly, theres a ton of other stuff as well though.

1200 is not a good price to offer. And since it is a early model cruiser there will be drums all around and course spline axles. But lets say you bought it for 500 dollars. And found a donor engine you could come out with say maybe spending 1500 and have brakes engine and drivetrain in somewhat good shape. It's hard to tell what exactly is wrong with it though. I would need to see it in person or It would need to be a really good price.

Just remember Alex has a 71 and he wheels the piss out of it and it holds up. + it looks a lot better and is more reliable than mine.

his last post said SOLD, so sounds like he flopped again. Perhaps Razorback made him an offer he couldn't refuse.
