I cut a giant hole in my cargo floor for a fridge. Not for most, but perfect for me!
Onboard air port in the front bumper. Cover is 3d printed in TPU and the overall mount is printed in ASA (UV stable ABS)
100AH LiFePO house battery, solar charge controller, dc/dc charger, etc, etc. 200 watts of solar on the roof. also yodateq gullwings.
This is probably the biggest life changing system in the vehicle. I can live off-grid virtually indefinitely with this and the fridge. This is version 2 and version 3 is about to be kicked off.

I put some low intensity rear cargo lights (okay, they are amber LED trailer clearance lights) in the holes left over by the rear seatbelts. Perfect for finding stuff in the dark at camp.
Added Well Visors and painted my hood (plus a 2" strip on the top edge of the fender) with raptor liner to cut down on the glare when I'm driving due east/west at sunrise/sunset (and to cover up the failing clear coat). Both make a big difference on trips. Next thing I need is a gradient tint strip across the top of the windshield.
It's hard to get a good pic of the raptor liner because it blends in so well in photos, but it's pretty obvious in person.
(Also, that CB antenna is fantastic for checking height clearance when I have gear on the roof)

Wireless phone charger where the ash tray used to be. I know some people do an Auxbeam panel or radio mount, but I love having a place to keep my phone.
I did this and love it also!!!!!
Find a Long Range Automotive distributor in the US. I have the 90L (holds 27-28 gallons) or their 160L version. I can fill both the factory and auxiliary tanks from the modified filler neck, aux tank acts as a transfer tank.
Someone has actually made an alternative using a GM fuel tank, here's the thread:
One of my favorite additions to my 80 is the extra fuel tank--I really enjoy not carrying fuel cans. 
I constantly missed having that functionality on my 100, even just for around-town driving. So, I duplicated the setup I did under my other truck.
It's a fuel tank for an '87-'95 (ish) S-10 Blazer. The pump/sender assembly changed a bit over the years, so I picked one from a 1990 because it has simple barb fittings instead of weird threaded things.
I used the mounting brackets for the same truck, GM part number 15684333, and the rubbery isolators 88983035.
A fuel gauge/switch...
