The red looks pretty bright. Is there a way we could get a low-lumen version?

I like the idea and had actually drawn up a latching circuit design for the same purpose, just never did anything further with it.

Its only 3 leds for the red, so it's not as bright as the picture looks. I could manually remove one or two.
 
Here are some photos showing the shield with the switchable White - Red LED mod from @Outsane
Note that I placed white paper label dots over the Red LEDs. These act as ND filters to reduce the output of the red LEDs. I stacked the labels until I achieved the lower luminosity output (I wanted the red light to be super, super dim so I could use it continuously at night). The camera makes the red appear brighter than it is in person.

Here you can clearly see how the map light shield cuts the light before it reaches the headrest. This helps maintain your night vision by blocking the light source from having a direct path to your eyes. As a result, your pupil doesn't have to quickly constrict to adjust to the rapid increase in environmental light, which reduces eye strain and improves your ability to see more around you and the car.

Reminds me of the bmw

That is exactly where I took my initial inspiration from, my old e38 740iL had amber downlights that were awesome. I've since added what I call 'concealed source downcast cabin lighting' to my e30 touring by drilling some holes into my rearview mirror and mounting a couple of recessed 5mm red LED's.
