What's funny is that I am getting about 16 on the highway and around 13-14 in the city. I am also running a 5.3l so as you can see, there's no real difference in economy versus engine size. You just have a good bit more power.

This is what I think I have distilled over the last couple weeks:
Given: If I want to run a chevy aluminum V8 petrol block motor and the 6 speed auto trans in my '97 80 with the original Toy transfer case, I need to run the 6l80e trans, as Marks Adaptors currently only has an adaptor for that 6-speed auto trans to our transfer case. And no one else makes such an adaptor. (Correct?)
Given: The 6L80e trans really needs a Gen IV motor (e.g., LS2 or LS3) to effectively connect up with electronically and function. (Correct?)
If so, then: I need a Gen IV alum block gas motor and 6L80e trans. (Correct?)
Of these engine-trans combos as they came in cars and trucks, some have truck intake manifolds, and the motor accessory belt spacing varies from close to the block to further out in different vehicles. I expect the truck manifolds provide more low end torque, but will they work with our hood height spacing? I expect to change the oil pan.
Considering all the above, my main questions are:
---What would be the ideal donor vehicle to pull the engine-trans-harness-ECM-pedal-etc out of to transplant in an 80?
--Do I want the truck intake manifold?
--What belt spacing is ideal?
-- What are the various 6.0 and 6.2 L alum block motor choices that fulfill the above and came with the 6L80e trans? (LS2, LS3, L76, any others?)

You can go with just about any donor vehicle on this depending on your budget. A fair amount of fabrication work was still necessary in my swap, so be prepared. A popular selection that offers solid torque as well would be the Trailblazer SS. I happened to be drawn to the DoD addition offered on the Pontiac G8, but lucked out and wound up with a nicer set up that I expected when I received a G8 GXP dropout. Fuel economy is still undetermined as I haven't been able to drive it yet. I will try to post more details on my swap very soon. Currently responding on my iPhone, so it is cumbersome and slow to type.
