Largest tires on stock rims after a bilstein 5100 leveling lift?

My 2009 GX470 has 17 x 7.5 stock rims, and is getting a "leveling lift" with new bilsteins.

I need to replace the tires and would like to go larger, and was wondering how large I could go with the stock rims?

I had 255/75R17's at stock height and rubbed the fender liner slightly when turned hard. I believe 265/70R17's will also fit at stock height, so either of those should be OK. How much of a lift are you expecting?
