So maybe go with 285/65/18? This is a rig that will be used mostly on road with light overlanding on weekends

Another very common size to consider is 275/70 R18 (33.2"). Splits the difference between the 285/65 R18 (32.6') and 285/70 R18 (33.7") And gives you the option for a couple lighter tires given that you said it is mostly road with light overlanding.
