I'm looking for some advice regarding the exhaust manifold surface that mates to the heat riser/intake.

Do I need to clean up the surface any further(see pictures) or will the gasket compensate for the irregular surface? If so, what should I do to clean up?

I do plan to eliminate the heat riser and use the stainless block off plate.

Looks like you never got a response. I'll take a crack at it. I think it's more important that the intake and exhaust surfaces are milled to the same thickness, and the gasket takes care of the unevenness in the mating surface.

However that's a lot of pitting. Hopefully a true expert will correct me.
 
I had the same thing with mine and I cleaned it up with a 90* die grinder and a mild disc. worked fine.
 
A little more cleaning with about a 120 grit firm backed disk keeping it as flat as possible, just enough to get the remaining rust and a definite 2nd on the remflex gasket.
