finishing out the knuckle job this weekend. Never done this before so i've been reading on it some. Seems like there is not much to it, but i do have a question about how much grease to pack in the birfield and the knuckle housing?

I've seen a bunch of folks say to empty a tube into the birf and when you insert the axle it will hydraulic into all the gaps, and that's enough, empty two tubes into the knuckle via the fill hole.

Then i've seen like the pictures below in a writeup, where they basically used all the grease they could pack into both.

Any ideas or tips?

I pack all I can into the birf, making sure to work it at all angles, then fill the knuckle per the FSM. I don't remember, but think it says like 1/4 or 1/3 full. It doesn't need to be packed full.
 
Like Cam said, when I watched Rob re-pack mine, he did it almost like you would press grease into a bearing. Used his palm (on a gloved hand) to really shove it up in there and then sort of worked his way around the circle in that fashion. I think we filled my knuckles up at least a 3rd; It will "squish out" if you put a little too much in (or you if you really over do it just won't seat and you need to remove some). Just be careful not to break your axle seal (grease the length of the shaft before you slide it back in - yeah, i just said that - unavoidable description).
 
Fill it up. I use about a tub a side on an 80.
 
If you don't think you have enough in there (looks like you do) you can always pull out the square plug in the knuckle and stick the grease gun end thru the hole. Top front side of the knuckle. Bossman likes to drill and tap these plugs for a grease fitting that way it's easy to shoot a few pumps in there from time to time.
