I'm pretty sure all tires are measured unmounted at full pressure. The specs I've seen on customwheeloffset appear to be physically measured in that they vary from brand to brand and model to model. I believe they're doing more than the math on the label...
It looks like they measure 32.05" unmounted and fully inflated.

This site is amazing for getting exact specs on a huge number of tires. I've not run across this detail anywhere else.
I don't think shocks are intended to be a limiting factor on suspension. You would have more of an issue if the airbags were over compressing the shocks. I think you should be fine with stock airbags.
Another option would be to add helper bags to the coils. You can use the auto leveling system to inflate the bags only when needed. This seems like a great way to utilize the leveling feature without fully relying on airbags for suspension.
It's easier to open the door and have it stay open. Outside of high angles and strong wind, the door will stay in the open position without locking it into place. There are certainly disadvantages to the mod, but many people find it helpful. If I were to do it over again, I might spring for...
