Biggest ride upgrade for me was going from 2" shocks to 2.5" shocks with adjustment. My set up is similar to yours (drawers, bumpers winch etc). I run Icon 3" springs up front and Dobinsons VVT 3.5" in the rear. It rides pretty nice for a 25 year old truck.
Dobinsons is good, particularly if you plan to add weight.
Icon is also good, and affordable, but isn't as suited to a heavy rig. Their systems do ride nice though.
Its specifically for the Oregon Trophy Challenge race. About half of it occurs at night and requires a lot of map and direction reading. Last year we used regular headlamps and found the constant white light made it harder to see the course.
