I will be lifting my 91 LJ77 using Dobinson Springs 60 mm lift kit.

This will lead to new tires. I am debating on what size to run.

I will be getting Dick Cepek Extreme Country MT's. Do I get 255/87/16 or 285/75/16?

Both are 33's with the 255's being 10.2" vs the 285's being 11.3".

I will be using the stock 16" wheels that came with the truck.

The truck has 245/75/16's which are 30.5" x 9.6".

I guess the only real question is will the wider 11.3 inch tire fit without rubbing?

I've got the same lift in my KZJ78. I run 33x10.5x15 with more offset aftermarket rims. No issues. I like the narrower tires for most of the wheeling I do. Not a lot of sand or mud here.
 
Both are a nice size; I'd probably go with the skinny ones personally. Keep in mind your factory 16" rims are only 6" wide. This is less than the minimum recommended rim width for both tires, although some people do mount the 255's on these rims. The 285's you'd definitely want a wider rim; so factor that into your budget.
 
255 recommend 6.5 to 8 inch rims vs 7.5 to 9 inches for the 285.

255 it is.

That must be a summer picture Jimmy. My Land Cruiser is so dirty right now I can't see the paint. Are you covered up yet? Just started for me, I know you guys started this morning.
 
Here to. Piling up faster than last week since it's already got a decent base. I unfortunately was in the heavy snow area last week, so it didn't really go anywhere.
