I get that they'll grab (at least) an electron, but exactly how am I supposed to know which one I have?

If you have an electron in your tweezers, you can't know both where it is and how fast it's going. There is a joke:

Heisenberg is driving his FJ40 like a madman. He gets pulled over. The officer walks up to the driver’s side and asks Heisenberg, “Do you know how fast you were going?”

“No, but I know exactly where I am,” Heisenberg replies.

The officer looks confused and says, “You were going 120 km/h!”

Heisenberg throws his arms up and cries, “Great! Now I'm lost!”
