Would newer fluids like Low Viscosity variants be better for the system overall?

No! Toyota Brake fluid is best and only I use.

I took advantage of the sale and bought the whole assembly for my 2002 LX. What’s are the schools of thought on letting the new part sit indefinitely until I need it? Is there a “shelf life” when these are sitting dry?

I think they come with fluid already don't they? Might as well just install it if you bought it. Should (hopefully) last 15-20+ years if we assume equivalent quality to the originally manufactured part. Which I'm not 100% sure we can make that assumption, and is part of the reason why I ultimately decided to not replace mine until it fails or shows signs of failure.
