pickled egg recipe..?

my mom and her husband decided it would be a great idea to get some chickens for fresh eggs...

they have a few acres and apparently got bored.

her hubby went a little overboard on the chickens...now they are getting 16 - 20 eggs per day.

I told her to boil and pickle them but she needs a good recipe...

anyone, anyone?
 
hard boil, peel

let them soak in vinegar, salt
and whatever spice(s), peppers you like
i would try maybe a bottle of tabasco for starters... but that's just me.

for at least 2-3 weeks in a tight lid jar.
every couple of days, pick up the jar and tumble everything around.
 
Soak it in this(along with the other stuff listed above) and the stepfather will be thanking you. His farts will be so impressive she may divorce him:flipoff2:

I like Willy's Spicy Pickled Eggs. I buy a gallon jar at Cash and Carry, and just add more eggs to the jar when the last egg is gone.


They make me fart like a rodeo donkey though.
 
Here's a simple one that always works good. Get a jar of pickled beets, eat (or discard) the beets and refill the jar with boiled eggs. They come out quite purple but taste like deviled eggs.:D
 
GO cehap and ghetto.. Find a pickle that you like, reuse the juice..

Or get some of that Gardeneria crap (the cauliflower, carrots and celery that's pickled) Eat the Veggies and go from there.

Actually, my favorite is recycled jalapeno slices juice :)


I know, Ghetto, but it works and is easy..
 
I actually know how to pickle them, just looking for a good spice mixture.

when I was in washington a few weeks ago, I bought some pickled quail eggs at this goofy merchantile and they were very tasty, spicy...

pickled quail eggs are the gut bomb!!

IIRC, quail eggs have the highest fat and cholesterol content of any eggs. 3/4 of the egg is yolk....no wonder they are tasty
 
I didn't have that many, so I recycled the brine from a jar of Wickles:

I ended up having to add more vinegar, Tabasco, garlic, peppercorns, and chiles though.

However, the Wickles brine is full of HFCS, and it was rather sweet. So next time, I think I'll use this recipe:

1/2 cup water
1 1/2 tsp salt
2 bay leaves
5-10 chili peppers
2 1/2 cup vinegar
2 tsp sugar
2 tbsp allspice
2 tbsp peppercorn
1/4 tsp garlic powder (I'd probably use fresh garlic)
