how similar are the rear axle's of a 80 and a 100 ?

Only the 80 series. In the USA and most other markets the 100s and 200s have semi-float axles.

I believe the 105 series also got full floating axles as well.

Yep but only available briefly and basically an 80 chassis with a 100 body.
 
The 80 and 100 series both have 9.5" rear differentials BUT the 100 series thirdmember is stronger and has a anti-deflection for the ring gear built in, the carrier is also a tad larger. Besides the axle shaft splines not matching I am not sure if the thirdmember housings are interchangeable.

(the 100 series rear does not use shims like the FJ80 rear for setting bearing preload, uses threaded adjusters like the 8")
 
Only the 80 locker housing uses shims. The non-locker housing uses threaded adjusters.
