Hashbrowns

I like to make a hash from the Thanksgiving leftovers.

Mashed potatoes, sweet potatoes, turkey, ham, stuffing...Basically anything you have leftover. Cranberry sauce on the side is nice too.

Throw it all in a cast iron pan and grill it up browned. Mix as you go so it forms all the browned up bits. Been doing this for years...love the way all the flavors meld together.

You should have thrown in a Mexican pizza and 2 soft grilled taquitos for the full sonic boom.

You can get the same effect by downing a dbl espresso in the AM, (pre poop).
 
Does anyone know why they call deep fried potato wedges jo-jo's in Oregon? I came from Wisconsin and they asked me if I wanted jo-jo's or regular fries. I didn't know what the hell a jo-jo was so I went with fries. I later discovered the jo-jo's at the Safeway deli dept. For like three years I ate those bastards at least three times a week. Best poor hippy food ever, and if your lucky you could buy your foody holding buddy a pound and he would use his stamps to get me a weeks worth of groceries. Nectar of the gods those jo's.
 
Well, they're not hashbrowns, more like homefries, but who cares? Look at those Bennies.. :grinpimp:

Oh, a sidenote about JoJos.. As a child, I had a neighbor whom said she'd invented them, never had heard of them before that but I have seen them once in a while here and there since. She was a great big woman, 300-350#, and was a Wilton professional cake and candy trainer. The family (I was friends with the youngest of 4 boys), were all from Kentucky, and she could make old boots taste like ambrosia.. Pickled veggies, and canned fruits all year, fresh eggs, chicken, and even rabbit were staples.

Oh, she made good hashbrowns too..
 
Yum. To accompany our Ribeyes tonight. I shreaded, yes shreaded not that bag stuff, but yellow spuds, blanched them, added red onion and then broiled those suckers until crispy. Made a garlic mushroom gravy and fried up some baby artichokes. Forgot my damn camera back in the city. :doh:

Fricken hilarious to me. Maybe just to me, but who cares?

I had to do the bachelor thing tonight, and I cooked me some hash browns as a result of reading this stuff the other day. I took a picture with the intent of posting it into this thread and maybe make some of you fawkers jealous.

I figured I'd have to do a search to find the thread since I haven't seen it in a while. But, I clicked on Chat, and there it was, right on top.

Now, how could you not like a dinner like this?

I'm happy to have changed so many lives with this thread. I've still got 2 bags of the hashbrowns left. It's getting harder to get up in time to cook breakfast for myself. I might start having to skip class so I can get a decent breakfast.
