grilled jalapeno poppers

Gonna go pick up a jalapeno grill rack.

Anyone have a good suggestion for what to stuff inside the peppers along with the cream cheese?
 
Are you making stuffed jalapenos or breaded poppers? If stuffed, I use cream cheese and jimmy dean sausage. Or spice the inside of the jalapeno with cajun seasoning and stuff with cream cheese and chives. Then wrap in bacon.
 
Pepper jack cheese and sausage is good inside grilled jalapenos.

If you don't have a rack on hand, you can make a disposable one out of tin foil. I'm ghetto like that.
 
Already hit up the store for some disposable tin pans ;)
 
Eat fajitas on night one.....but make enough to have leftovers.


core out your jalapeno

grind up some beef or chicken fajita meat leftover from night one.

Mix in some oaxacan cheese (Mexican mozzarella) along with cilantro if desired.

Stuff in pepper and place in jalapeno rack.

Place a small piece of rendered bacon (partially cooked) on the top of the pepper and attach with a toothpick.

Put in the oven or on the grill till the bacon is crisp.

Enjoy until the next morning when you might regret your food choice depending on the strength of your japlapeno.

Had some of this on Christmas break. She cooked 1 tube JD sausage (this was maple), broke it up as fine as possible. Threw in 1 block of cream cheese and mixed it up. Jalapenos were halved and seeded. Lay out JPeps, put a spoon full of saus/cream cheese mix on it, bake for 20 minutes until the cheese gets lightly browned. Awesomeness. :cheers:

I've tried them without the meat/cilantro, just oaxacan cheese/bacon on the grille over mesquite wood, and they were great. I am going to include the meat & cilantro next time...
 
cook up some polenta,
dice lightly cooked (very floppy) bacon,
mince fresh parsley or cilantro

mix. stuff into peppers. rub w/ oil and sprinkle with salt (to taste)
wrap in foil

cook on coals, turning once or twice.

Yummy.
 
Pack them with cheese, wrap with bacon. Secure it with a toothpick and grill, done.:cool::grinpimp:

One note of caution, don't put 70 on the grill at the same time. Yeah, I'm an idiot.
