It's what was for dinner tonight..

Super simple, butter up the filets, a sprinkle of lemon pepper, sea salt, cajun seasoning, and garnish the whole deal with fresh chopped cilantro...

Bake at 375 for a spell, and serve with brown rice..

That looks good! Snapper is my favorite non-pelagic fish. Yum, yum. My wife would love that recipe, she loves cilantro.

The way I normally cook red snapper is:

Snapper fillets
chopped purple onions
chopped cherry tomatoes
zesty Italian dressing
avocado
Tony Chachere's Cajun seasoning


I put the fillets, purple onion, cherry tomatoes, seasoning and Italian dressing in baking glassware and cook at 350 F. Too me, cooking snapper has a different time limit every time due to fillet thickness. If I cook it slightly overcooked I hate it. I try and cook it where it has just barely turned white in the center. Then serve and throw the avocado wedges on top.
