The first picture is correct in my experience. I just replaced my ‘78 with oem and it had the form pre shaped to fit around the striker and just behind the edges. I did not cut anything in this area. Just the front doors for excessive length.

Lagers are actually harder to brew than many other styles. Not much going on to mask off flavors if something is a tad off. Cleanliness, a good boil and fermenting temperature will determine a good lager. Ironically I’m tapping a light lager tomorrow at my work-
