I got this 5gl of oil would it work for transmission transfer case and differentials?

It looks like it's GL4, so it should work fine. Those older cases don't seem to particularly care that much about brand/additive packages, more of the fact that there is some form of 90wt in there. I would run it. I'm sure other people have other opinions though.
 
with it being a straight weight, i probably wouldnt run it in a trans/transfer....but would happily put it in rears.

In Arizona would not be as concerned. Only time I've driven in temperature close or below Zero would just let the engine idle to warm up. Let the transmission in gear and trans in neutral and let the oil heat up and thin out. This happened rarely. Now keep in a insulated garage where never see anything below zero. In Pennsylvania could see a straight 90 weight being a problem. 90 weight in summer is definitely not a problem here.
