You want to make sure that all contact points for the shoes are clean and greased with white lithium.

A possible problem is that the shoes "rock" in place when you apply the brakes. This rocking can simulate the e-brake action and cause them to over adjust and bind.

The system is designed to adjust the shoes when you use the e-brake. So I assemble the shoes with drum and then use the bellcrank like a ratchet and repeatedly move it until the clicking inside the drum stops.
 
Would a slight "knock" as I take off from a stop be indicative of this happening? Because for the longest time i have noticed a slight knock occur in the drive train as i take off from a good stop (not a rolling like i mostly do).
 
possibly. The shoes need to be able to slide freely against the backing plate as well as the pivot points so they return home via the spring pressure after lifting your foot off the pedal.

You could also have a broken spring in there that is allowing the shoes to move around.
 
i pulled the drums off earlier and there is no broken spring. lots of dries mud that has made everthing kinda..sticky? should i take a pic?
