White Chicken Chili

Things you will need.


32oz box chicken stock
3 cans of white beans (drain half the water out)
1 rotisserie chicken, I am a little racist as I use white meat only.
1 16oz jar of salsa
1 8oz block of pepper jack cheese
2 teaspoons ground cumin
2 cloves minced garlic
1 teaspoon white pepper to taste

Put some latex glove on and bone your chicken hot.

Place above ingredients into crock pot and cook on high till cheese is melted or use large stock pot.

Add 1/2 fine crushed corn chips and let simmer for ten minutes to thicken. Plate and garnish with chips, grated cheese and a dollop of sour cream.

This is what it looks like when done.

We make a double batch monthly and vacuum pack them. You simply freeze flat and boil in water when your hungry.

I've done a similar recipe for years. It's quite variable, I usually add a can of corn, different types of beans can be used. For instance, black beans and sausage for black bean soup. Whenever possible, I prefer fresh veggies added just before serving and add the cheese in the serving bowl.

No matter how you twist it....it's a good hearty meal.:bounce::bounce2:
 
Just finished my last batch last night. Added zucchinni and fresh spinich this time. A few tablespoons of lime juice is a nice touch too.:cheers::bounce::bounce2:
