Tri Tip??Man I'm in Texas, we can't even get it here 'less we have the butcher cut and then have to tell him where it comes from, that is the official Texas meat.............Brisket. packer cut.
 
LOL.. Looks good! Just give up the mop... I don't care what smoker you use!


I smoked some salmon up. It was the best salmon I ever had.

Mop's are for the kitchen floor....that brisket has 22 hrs of Pecan/oak smoke, nothing else, no rub at all.....light dusting of Kosher salt and course black pepper.
I use mustard and rub on pork.
