There has to be something basically wrong in your truck. I don't have a SC but took my family on a cross country trip when the truck was bone stock. There was 4 of us with 3 weeks of gear. Only once did the AC cut off from coolant temps and that was climbing out of Death Valley in 135 deg weather. I'm sure you have checked everything twice in there but sounds like an exhaust restriction to me.
