I am looking at swapping a SBC or even SBF into a '73 FJ40. I am in east Texas. Would anyone know of a shop that they could recommend that might be interested in doing something like this?

Lots more common for SBC. I would consider changing out the 3 sp for something else, the 4sp with the adapter to your 3 sp transfer case would offer about 1/2 gear lower in low range low. I'd like to do the NV4500, has a lower low and more importantly overdrive.

Yes, I forgot to mention, we already did the swap to the 4 speed on this one.

My dream engine would be a hand built 283 Corvette motor, for the RPM's. I had a 283 with the medium valves. Still have the adapter and a 4sp. Need the transfer adapter but the 4 sp has the transfer case.

Both are good engines. Pretty much everything has been swapped into an FJ40 at one time or another but the most common swap has been the SBC. I would say that even that engine is slowly being eclipsed by LS swaps. One nice thing about going with the Ford engine is that the distributor will be in the front. I don't know of any shops in Texas but any shop focused around 4x4's or classic/hot rods can handle this swap. The wealth of information on this site is more valuable than words can say and is offered freely and patiently by experts (I am not one of them). I like to return the favor by supporting their shops/businesses (if they have one) when I need to purchase Land Cruiser related things.
