Rear Seat Retrofit? What are my Options?

Those, add a headrest kits, sounds like the best idea for the upholstery and will maintain the best look! Now the big follow question would be to mount the belts to the future cage or to the body. Body sounds best in my opinion and less "Jeep" like! haha
Is there a goto junk yard/pull apart model truck to pull from that's similar length and just drops in? How are you guys reinforcing or mounting these belts to the vehicles that didn't come with the shoulder belt? I would prefer new belts with pretensioners for my children.

Seatbelt geometry is a real thing and I wouldnโt blindly give advice about how best to protect your children.
Most aftermarket seat belts come with some generic instructions and mounting hardware.
Most aftermarket racing seatbelts will also give you some general guidelines on mounting locations.
If I was going to go through the steps you are talking about I would look at the requirements for some the racing sanctioning bodies like S.C.O.R.E. or S.F.I and follow along with their recommendations, they have some proven requirement and will take all the guess work out of it. It wonโt cost much if any more to have belts installed to a standard.

My mom used to just stick her arm out to keep us in place when she needed to do a quick stop

My father did the same. My Father, Mother and 8 kids in the old Ford wagons. He could reach across to passenger door and to back of middle seat
