Ok, dinner is done. The shoulder was perfect. Great flavor. Very tender. Served up "pulled" style. Everybody had seconds and there will be some kick ass BBQ sandwiches made tomorrow... all in all, two thumbs up.

I wasn't brave enough to eat the cueritos, but they seem like some hella doggie snacks for my pooches. :grinpimp:

You are going to slow smoke pieces of pork tomorrow? What does that have to do with the pernil you made? I know that you are not saying that you can take oven-roasted pork and magically transform it into bbq. Only a yankee or somebody from Texas would act that way.

The left over pernil is going to get some BBQ sauce dumped on it and sandwiches will be made... It's not going to be competing for the Memphis in May title or anything, but it will kick the s*** out of any BBQ I've had in the last two months (i.e. none...).
