My 2006 has the RSES and I have been considering replacing my head unit, which will then render the rear screen useless....so I will probably get some of the dual screens that can be removed easily for the kids.

BUT, what to do with the flip down screen that is in the ceiling? Any options to cover it up besides fabbing something up and covering it with headliner?
 
I installed a system in my buddy's Eddie Bauer Excursion with rear seat ceiling monitor. What I did was gut the monitor and transfer the guts of an RCA brand monitor from one of those $79.00 dual screen aftermarket setups, I used the "slave" screen, the one without the DVD player (the master screen was still usable in another vehicle). It runs on 12v and takes a simple RCA input so wiring it to the Kenwood double DIN unit was a snap.

It was a setup similar to this one. One *Master* unit with the DVD player built in, and a *Slave* connected with a cable carrying power and picture:
