I had a local spring shop install the Dobinsons kit. They did a beautiful job with the install. The truck sits level and everything is nicely greased, super smooth driving over speed bumps.

The tires right now are old mismatched 31s. I was planning on buying a new set of 31x10.5x15 Michelin Defenders. But the 31s just look too small to me, and I'm thinking about going for the 33x10.5x15 KO2s instead. On-road drivability is still my top priority. Am I making a mistake going to 33s?

yes go 33x10.5 bfg or the 32x11.5 faulkin AT3 (?) - the bfgs run small-ish so I dont think you have too much to worry about

33x9.5 Kendas with Heavy/Heavy OME lift - they run more true to size but not the quietest on road

I run two sets - mainly and mostly 265/75R16 (31.85) on a 7inch rim with negative 15mm offset. (Top pic) (2.91backspace) or 255/85R16 Toyo MT (33.5) on the same size rim.(Bottom pic)
While the 255/85 look better in my opinion foremost the braking performance and also day to day normal driving is better with the lower 265/75
The heavy Toyo MT might also contribute to the poorer braking.
I used to run smallish Cooper S/T Maxx in 255/85 and they are only 32.8 - they were a really good tyre but are too expensive here in New Zealand.
We can only cry when we check out tyre prices in the US - they are so so cheap compared to here.
EDIT: forgot to mention that Im running stock 3.70 ratio - very good on the open road with relaxed rpm at a 100km/h but a bit overgeared with heavy trailers and in serpentines. That's even with the 32in tyres. 4.10 would probably really good but once again - just too expensive over here.
