Here is the salsa recipe I started with. It's from:

Restaurant Style Salsa | The Pioneer Woman Cooks | Ree Drummond

The only thing we do differently, is I roast the jalapenos on the grill before putting them in the salsa and I sub in one can of Rotel Habanero chilis. Oh, and I double the amount of cilantro. I love that stuff. this recipe says to refigerate for at least an hour, I let mine meld together for at least a day.

Ingredients
■1 can (28 Ounce) Whole Tomatoes With Juice
■2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
■1/4 cup Chopped Onion
■1 clove Garlic, Minced
■1 whole Jalapeno, Quartered And Sliced Thin
■1/4 teaspoon Sugar
■1/4 teaspoon Salt
■1/4 teaspoon Ground Cumin
■1/2 cup Cilantro (more To Taste!)
■1/2 whole Lime Juice
Preparation Instructions
Note: this is a very large batch. Recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.

Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you'd like---I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.

Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

great! still needs some tweaking, but i ate enough to not be hungry for dinner afterwards :)

we'll compare and contrast next time we're sitting around the camp fire

sounds like a plan. whats the recipe she srated with?

Its one that her mom put together

Its got some olive oil so its "looser", also not all the spices its very simple, taste more of the tomato than anything, sweeter. Its most similar to the Tostitos resturaunt style salsa.

Also, uses stuff from our garden :)

Oh, and no cilantro, sorry

No cilantro???????

gotta have more cilantro!

I' m reall thinking about going to pizza cutters to save on rotational mass.

lets set up a mod day in BR. we can do it at my house, or your layton's dad's shop if that's cool with him. I'm thinking sometime in mid July just to give everyone decent notice. how does July 14th (saturday) sound to everyone??
