Spivey Special--Elissa IPA



Description
A traditional India Pale Ale, the Elissa IPA is very hoppy with a properly balanced malty body. Elissa has huge hop additions in the kettle that give it a wonderful bitterness and is then dry-hopped in the fermenter to create the pleasant floral, hoppy nose. Our reverse osmosis water makes the bitter very soft with no harsh notes to it. The maltiness is derived from British Maris Otter malt. Its rich flavor stands up to the hops that would otherwise dominate this beer. The Elissa is an authentic version of an India Pale Ale (IPA) style.
Recommended pairings: Any style of seafood, Indian food, & spicy Thai.

Ingredients
Malt:
Made with all British malt. The base malt is Maris Otter, augmented with some medium crystal malt.
Hops:
We use a single hop in this beer: Cascades. This is a distinctive American hop noted for it’s citrusy flavor. We make three hop additions in the kettle as well as a large dry-hopping in the fermenter. Our Elissa IPA is pure, with no additives or preservatives. In order to maintain the freshest flavor possible, we do not pasteurize our beer. Many of its subtle flavors are delicate and would not stand up to the heat of pasteurization. We recommend that this product be stored cold to avoid any degradation in flavor.

Devil's Backbone (spring release) draught only, bottles 2010
Named for the scenic ridge that runs between Blanco and Wimberley, Devil's Backbone is a Belgian-style tripel. Czech Saaz hops and Belgian yeast give this ale its distinctive flavor and aroma. Candy sugar made in-house at the brewery adds strength without increasing heaviness. The result is a deceptively strong, pale golden ale.
ABV: 8.1%, IBU: 36, OG(plato): 18

(512) India Pale Ale is a big, aggressively dry-hopped American IPA with smooth bitterness (~65 IBU) balanced by medium maltiness. Organic 2-row malted barley, loads of hops, and great Austin water create an ale with apricot and vanilla aromatics that lure you in for more. (Approx. 7% ABV)

Hey Parker, I hate casinos. That was just the cheapest place we found. Your cabin sounds way better hands down, but I'm not the decision maker. I'm just along for the ride and for emergency mechanic services if needed.

Lemme talk to Pat and get back to you. If we hit Jackson and the Cottonland meeting on Tuesday, is the cabin available for Wednesday night?
